Zimska čorba za oproštaj sa zimom | Winter stew (farewell winter)

Zima je na izmaku! To me veoma raduje. Tokom zimskih mjeseci nema puno raznovrsnosti i raduje me cinjenica da ce uskoro proljece i da ce se na pijaci moci naci sve vise voca i povrca, a da to nije krumpir, korjenje, tikve i jabuke! Nije da ih ne volim, ali nakon sto cijelu zimu spremam vise manje samo sa tim sta je dostupno (u kombinaciji sa raznim mahunarkama) onda me veseli i sama pomisao na raznovrsnost. U to ime, evo da sa ovom zimskom corbicom zimi kazem dovidjenja, sretan put i nemoj se vracati tamo negdje bar do kraja novembra!

Sastojci:
2 solje suhih leblebija/slanutak (potopljenih u vodi preko noci)
2 veca krumpira
1 veci bijeli lukac
2 solje grubo sjecenog spinata
1 zlica putra od kikirikija*

Zacini po zelji (morska sol, papar, aleva paprika, suhi oregano, kumin, kurkuma)

Priprema:
1. Leblebije isprati i staviti da se kuhaju u vodi skupa sa oguljenim i ociscenim krumpirom.
2. Kad je krumpir na pola kuhan dodati luk i zacine (sve osim kikirikij putra).
3. Kuhati dok leblebije i krumpir ne omeksaju. Viljuskom zgnjeciti malo krumpira i leblebija pa dodati putar od kikirikija i spinat.


*Kikirikij putar nije neophodan, ali ja ga koristim umjesto zaprske. Fino zgusne bilo koju corbu i da mu poseban smek.

Winter stew


Winter is almost over and that makes me very very happy! Since during the winter months there is not a lot of variety I am also very pleased that the spring is bringing more variety in the market. I will finally start using things that don't involve only potatoes, roots, pumpkins or apples! Not that I don't like them, but after the whole winter of preparing more or less only with what's seasonal in the market (in combination with a variety of legumes), I am looking forward to seeing ​​diversity. In that name, with this stew I say goodby and farewell to this winter, may you n-o-t come back at least until late November.


Ingredients:
2 cups dried chickpea / chickpeas (submerged in water overnight)
2 large potatoes
1 large onion
2 cups coarsely chopped spinach
1 tablespoon of peanut butter*
Spices to taste (sea salt, pepper, cayenne pepper, dried oregano,cumin, turmeric)


Preparation: 
1. Soak the chickpeas over night. Rinse them and let them cook in a pot with water together with the peeled potatoes.
2. When the potatoes are half cooked add onion and spices (everything except peanut butter).
3. Cook until the chick pea and potato is tenderMash a bit some of the potatoes and chickpeas with a fork and add peanut butter and spinach.

* I use peanut butter for thickening instead of using flour. It gives stews nice twist.

Grah/pasulj sa suhim šljivama // Bean stew with dry prunes

Mihaela sa bloga Tortelina je za februarsko izdanje online casopisa MEZZE spremila pasulj sa suhim sljivama (str 68-69). S obzirom da volim suhe sljive u corbama znala sam da ovo ne moze biti lose. I zaista se nisam prevarila. Pojela sam 2 puna tanjura za rucak!!! Recept nema neke zvanicne mjere i kolicine jer sam sve stavljala odokativno (pocevsi sa istresanjem previse graha u lonac vecer prije).


Sastojci:
Grah/pasulj (kolicina po zelji)
2 vece glavice bijelog luka
5-6 sargarepi/mrkvi
15ak suhih sljiva
Zacini: morska sol, aleva paprika, kumin, svjezi ruzmarin, umjesto zaprske 1 zlica tahinija (ili kikiriki putra)

Priprema:
1. Dan prije u vecoj zdjeli potopiti grah da odstoji preko noci u vodi. Sljedeci dan vodu prosuti, grah isprati i preliti ga hladnom vodom te staviti da prokuha. Kad prokuha procijediti grah, isprati ga, preliti toplom vodom i vratiti da kuha. Dodati nasjeckani lukac i mrkvu.
2. Krckati na tihoj vatri dok grah ne omeksa (mozda sat-sat i po). Dodati zacine i sjeckane suhe sljive te pred sam kraj umjesto zaprske (koju ja licno ne volim) staviti 2 zlice putra od kikirikija.

Bean stew with dry prunes 

This recipe doesn't have any specific measurements because I put everything as I wished. So should you! =)

Ingredients:
Beans (any kind and amounts as you wish)
2 onions
5-6 carrots (washed and peeled)
About 15 dry prunes
Spices: sea salt, dry red pepper, rosemary, cumin, 1 tbsp sesame tahini paste or peanut butter (to make the stew thicker)

Preparation:
1. A day before leave the beans soaked in water overnight. The next day, through the water, rinse and cover with cold water. Cook on low fire until the water boils. Through the water again, rinse and now add warm water (this apparently reduces bloating). Add chopped onions and carrots.
2. Cook until the beans turn soft (for about 1-1,5h). Add spices as you like and chopped dry prunes. Just before the stew is cooked add a spoon of peanut butter for the stew to be thicker.

Gulaš od leblebija/slanutka // Chick pea stew

Evo jos jednog zakasnjelog FBI recepta sa Miminog bloga. Ovaj gulas mi vec cijelu zimu stoji za isprobavanje. Ovo je drugi put da ga radim (prvi put ga nisam stigla uslikati). I stvarno je fantastican! Odlicno se slaze uz isprobana Mimina raspucana peciva.


Ovo je usput i ulaznica za ovomjesecnu igricu Ajme, koliko nas je igricu. Tema su leblebije/slanutak a domacica je Tanja sa bloga Kuhinja zaposlene zene.


Sastojci:
cca 250 g sirovih leblebija/slanutaka
2 vece glavice bijelog luka
3-4 mrkve/sargarepe
1 paprika
1/2 patlidzana
Saka svjezeg spinata
Zacini: morska sol, suhi oregano, suhi ruzmarin, malo turmerika i kumina, 1 zlica kikiriki putra (kao zamjena za zaprsku), malo maslinovog ulja

Priprema:
1. Dan ranije leblebije potopiti u vodu i ostaviti preko noci da malo omeksaju.
2. Drugi dan, svo povrce dobro oprati i isjeckati po zelji.
3. Na malo maslinovog ulja dinstati bijeli luk i mrkvu (cca 5-10 min) dok luk ne postane staklast, a mrkva ne omeksa. Dodati ostalo povrce i na kraju ubaciti procijedjene leblebije. Usuti vode duplo od sastojaka.
4. Poklopljeno kuhati na tihoj vatri dok leblebije ne omeksaju (meni se krckalo skoro 2h). Dodati zacine i pred kraj ubaciti spinat i kikiriki putar da se gulas zgusne (ova zamjena za zaprsku mu daje poseban smek). Dodati tople vode po potrebi ako previse ispari.

Chick pea stew

Ingredients:
about 250 g dry chick peas
2 white onions
3-4 carrots
1 bell pepper
1/2 eggplant
Handful baby spinach
Spices: sea salt, dry oregano, dry rosemary, turmeric and cumin, 1 tbps peanut butter and 1-2 tbsp olive oil

Preparation:
1. One day earlier soak chick peas in a bowl and leave overnight to soften.
2. The next day wash and chop all the vegetables.
3. Put olive oil in a pan and saute white onions and carrots until soft. Add the rest of the vegetable and rinsed chick peas.
4. Cover and cook until chick peas are soft (it took me almost 2h). Add some warm water if needed. Add spices and just before the end add baby spinach and peanut butter.

Putar od kikirikija


Sastojci:
2 solje oljustenih neslanih kikirikija
2 kasike ulja (kikirijevog ako je moguce, ali ja sam stavila maslinovo)
1 kasicica morske soli
Malo vode

Priprema:
1. U blenderu samljeti kikirikij i dodati sol i ulje. Dodavati kasiku po kasiku vode da se dobije glatka smjesa. Ne znam tocno koliko sam vode dodala, otprilike 7-8 supenih kasika vode. Ako zelite da se osjete komadici kikirikija onda krace mljeti kikirikij.
