Sladoled od kokosa sa tostiranim orasima | Coconut ice-cream with toasted walnuts

(scroll down for English)

Sastojci:
400 ml kokosovog mlijeka iz konzerve
100 ml javorovog sirupa
50 g orasa (mogu i lješnjaci)

Priprema:
1. Ako imate mašinče, stavite bazu (činiju) u zamrzivač večer prije.

Coconut ice-cream with toasted walnuts

I know it's too early for recipes with ice cream, especially with this weird weather weather outside but I'm preparing for the season! I bought ice-cream maker and now I'm practicing for summer. I'm trying to find simple recipes that don't require a lot of milk or cream. This one with coconut milk is great. The first batch wasn't successful because I added cashews too early. The second batch came out great and I got real ice cream, creamy and not too sweet. You can do this recipe without the machine as well.

Ingredients:
400 ml of canned coconut milk
100 ml of maple syrup
50 g walnuts (or hazelnuts)

Preparation:
1. If you have the machine, place the base bowl in the freezer the night before.
2. The next day, in a blender or food processor mix coconut milk and syrup for a few minutes until you get a thick mixture. (I figured that both maple syrup and milk have to either be cold or room temperature, you can't have one from the fridge and the other room temperature).
3. Transfer the mixture into the ice-cream machine and let it work its own thing. Time will depend on your machine. For this basic mixture it took mine about 20 minutes.
4. In the meantime, turn the oven to 350 F, put the walnuts on a baking sheet and leave in the oven for 10 minutes. Don't let them burn. Chop them once they are cool.
5. When the mixing is complete, transfer the mixture into a mold and manually stir in 2/3 of chopped nuts. Align the surface and sprinkle the rest of walnuts on the top.
6. Place in freezer for a minimum of 2 hours.

Note:If you don't have the machine, after mixing in a blender pour immediately into the mold, mix in the nuts, and then put in the freezer. You'll have to manually mix the mixture every hour for at least 4 hours.

Enjoy!
