Kolač od jabuka sa emmer brašnom | Apple cake with emmer flour

Fresh Food Box je jedan od programa u mojoj organizaciji koji tokom sezone (jul-novembar) nudi torbu punu sezonskog i lokalnog voca i povrca koji dolazi sa lokalnih farmi za samo 10$. Za tu cifru dobijete bas pun torbak, ono da vam otpadne rame. Svaki tjedan je malo drugacije, zavisno od toga sta je u sezoni i sta farmeri imaju. Kad sezona prodje zapocne Winter Food Box. Za 25$ svaka dva tjedna dobijemo pun torbak zimskog povrca, jabuka, lokalni med ili organska jaja, pesnicno ili razeno zrno te, mahunarke i razne vrste brasna. Stvarno pazar koji se ne propusta. Danas Pred jedno 3-4 tjedana (toliko ovaj post ceka na objavu) sam pokupila posljednji zimski torbak za ovu sezonu i ugodno iznenadjenje je bilo emmer brasno. Kad sam dosla kuci morala sam malo da ga istrazim, jer priznajem nisam za njega nikad ranije cula. Prevod na naski nisam nasla. Ali to je brasno koje je u istoj porodici kao i pirovo (koje mi je jedno od omiljenih vrsta brasna). Navodno je emmer brasno u Italiji poznatije kao farro. Gaji se u podrucju Toskane, dok se pirovo vise gaji u Njemackoj i Svici. Nisam primjetila da je nesto drugaciji od ostalih vrsta brasna, ni po okusu ni po konzistenciji. Boja mu je kao integralno.


Sastojci:
1 solja emmer brasna
1 solja ovasnih pahuljica
2 zlicice praska za pecivo
1/2 solje sjeckanih orasastih plodova
1 zlicica cimeta
2 zrele banane
2 zlice meda ili javorovog sirupa
1/2 solje maslinovog ulja (ili nekog drugog)
2 solje svjeze ribanih i dobro ocijedjenih jabuka

Priprema:
1. Zagrijati pecnicu na 180 C.
2. U zdjeli pomijesati brasno, ovasne pahuljice, prasak za pecivo i cimet.
3. U drugoj zdjeli mikserom zgnjeciti banane, dodati ulje, med i jabuke. Potom ubaciti suhe sastojke i mjesati kutlacom tek toliko da se svi sastojci dobro sjedine.
4. Smjesu rasporediti po plehu oblozenom pek papirom i peci jedno 30-40 minuta (zavisno od jacine pecnice).

Apple cake with emmer flour



Fresh Food Box is a program in my organization which during the season (July - November ) offers a bag full of seasonal and local fruits and vegetables that comes from local farms for only $10. For ten bucks you get loaded bag with fresh produce. That's what I call a great deal. Every week is a little different depending on what is in season and what farmers have available. When the season ends we start with Winter Food Box. For $25 every two weeks we get full bag of winter root vegetables, apples, local honey or organic eggs, wheat or rye grains and legumes, and various types of flour. Again, a deal that you don't wanna miss. On Wednesday Three or four weeks ago I picked our last winter bag for this season and there was a pleasant surprise--emmer flour. When I came home I had to research more about it because, I must admit, I had never heard about this flour before. It is in the same family as spelt flour (my favorite type of flour). Apparently the emmer flour in Italy is known as farro flour. It grows mostly in the area of Tuscany, while spelt is more common in Germany and Switzerland. However, I didn't notice any difference from the rest of the flours.

Ingredients: 

1 cup flour emmer 
1 cup of oat meal 
2 teaspoons baking powder 
1/2 cup of chopped nuts
1 teaspoon ground cinnamon 
3 ripe bananas
 2 tablespoons honey or maple syrup 
1/2 cup olive oil (or any other) 
 2 cups freshly grated and drained apples

Preparation: 

1. Preheat oven to 350 F. 
2. In a bowl, mix flour, oat meal, baking powder and cinnamon. 
3. In another bowl, mash bananas with a blender, add oil, honey and apples. Then add the dry ingredients and stir just enough so all the ingredients are well combined. 
4. Pour the mixture in the baking mold lined with baking paper and bake for about 30-40 minutes (depending on your oven).

  1. Baš sam se pitala što je to emmer, supr da si objasnila. A super je i kolač koji mi se sviđa ! kao i način nabavke domaćih namirnica , baš zanimljivo i dobro !
